Coconut Milk Panna Cotta with Orange and Mint #desserts #sweets

… likely on the grounds that I was the food blogger with all the exquisite treats in my Recipes document. Be that as it may, I had been trying plans the entire day prior, and I would not have like to make a mind boggling experience.

I asked myself, "What feels celebratory and looks delightful, yet requires negligible exertion? Furthermore, what would i be able to move effectively from my home to the host's home (i.e., not a painstakingly iced cake)?"

Panna cotta. Rich and simple, it suits most dietary limitations as it is egg, dairy, grain, and nut free.

Coconut Milk Panna Cotta with Orange and Mint #desserts #sweets

INGREDIENTS

  • 2 cans full-fat coconut milk, at room temperature, available here
  • 2½ tsp. grassfed gelatin, available here
  • 3 Tbs. raw honey, available here
  • zest of 1 orange
  • 2 tsp. fresh mint, chopped
  • ½ tsp. vanilla extract

For serving:

  • Fresh berries if desired
  • My no-sugar-added blueberry sauce recipe, if desired

INSTRUCTIONS

  1. Have ready 4 ramekins for individual portions. Alternatively, you can set the panna cotta in a medium glass casserole dish, and scoop it out for "rustic, family-style" servings. Not as pretty, but still tasty.
  2. Have the coconut milk at room temperature. The coconut cream will naturally separate from the watery liquid in the cans, so use a blender or immersion blender to blend the coconut milk until smooth and creamy.
  3. In a medium saucepan, pour in 1 cup coconut milk. Sprinkle the gelatin over it, and let sit 5 minutes. Then, place the saucepan over medium heat and whisk until the gelatin is dissolved and the mixture is very hot.
  4. Take the saucepan off the heat and whisk the remaining ingredients. Let sit for an hour to steep the orange and mint. Then, strain out the orange and mint and pour the liquid into four ramekins.
  5. Let the panna cotta set for at least 6 hours, or overnight.
  6. Serve with fresh berries or fruit sauce, if desired.
