Ingredients

  • 500 grams sweet potato, peeled, diced and cooked until mashable
  • 2 large apples, grated
  • 1 egg
  • 1 cup self raising flour
  • OR: GLUTEN FREE? 1⅓ cups quinoa flour
  • Olive oil for frying
  • ½ tsp ground sage

Instructions

  1. Grate the apple into the mashed sweet potato.
  2. Add the sage, flour and egg.
  3. Mix to combine well.
  4. Heat the olive oil over medium-high heat.
  5. Fry tablespoonfuls of the mixture over medium- high heat until golden.
  6. Serve hot or cold.
