Ingredients

  • 2 tablespoon blanched almond flour I used this
  • 1 tablespoon Coconut flour I used this
  • 1/8 teaspoon Cream of tartar
  • 1/2 teaspoon Cinnamon
  • 1 tablespoon brown sugar alternartive I used this
  • 1/8 teaspoon Salt
  • 2 tablespoon Unsalted Butter
  • 1 large Egg
  • 1/4 teaspoon Vanilla extract
  • 10-15 drops Liquid stevia I used this

Instructions

  1. Melt 2 tablespoons of butter then allow that to cool while mixing dry ingredients
  2. mix blanched almond flour, coconut flour, cream of tartar cinnamon, brown sugar substitute, and salt
  3. go back to cooled butter and add egg, vanilla extract, and about 10 drops of stevia. I say 10-15 depending on taste but if new to stevia try 10 first to see how you like it
  4. beat wet ingredients then add in dry. Mix with a fork, batter will become thick as in video above
  5. Microwave 1 minute varying on microwave. For mines I had to microwave 1 minute and 15 seconds
  6. Now if the center looks a little undone just a small area that is fine. Allow the cake to cool and the center will soften up for you. Try to void overcooking the cake
